Who doesn't love a good pot of Gumbo? Gumbo is the most well-known and popular dish in the south. Thousands of variations exist on traditional gumbos, including seafood, chicken, and/or sausage with or without okra. A roux is a combination of fat and flour used to keep the soup together. When things were tough in the south, people added whatever they had to make a gumbo dinner in their pantry. Adding different foods and spices to a delicious gumbo requires as much creativity as the process itself.
